Light Brown Bread

  • all purpose flour
    180 g
  • dry yeast
    7 g
  • oats
    30 g
  • salt
    10 g
  • sugar
    10 g
  • water
    230 g
  • whole grain flour
    150 g

    Start in a large bowl. Add all purpose flour and whole grain flour , oats , dry yeast , sugar and salt . Mix together.

    Add water and knead for about 10 minutes.

    Cover and let rest. Cover either air-tight with plastic wrap or use a wet towl. Allow to rest for at least an hour, or about 20 minutes in a 40 degree C oven. We want the dough to double in size.

    Beat out the air, put some oats on the counter and roll out into a tube. Put into a 27cm bread tin (e.g. from action). Allow to double again.

    Preheat oven to 220 C. When putting in the bread, add some water into the drip tray and bake for 10 minutes. Let out steam, lower temperature to 180 C and bake for another 15 minutes.
